Millet, quinoa, corn and potato flakes arrive with a COA; moisture, impurities and aflatoxin are checked before unloading. Frying oil is non-GMO and tested for peroxide value on arrival.
Grains are de-stoned, washed and soaked to a controlled moisture so the starch hydrates evenly — this is what separates a cracker that shatters from one that bends.
Steam gelatinises the starch. We judge by state, not by clock: a grain pressed flat must show no white core before the batch moves on.
Starch, oil and the seasoning base are weighed to formula and mixed; every batch keeps an ingredient record tied to its supplier lot.
Four consecutive roll passes bring the sheet down to 1–1.5 mm. Even thickness is what makes an even fry — thin spots scorch, thick spots go tough.
Palm oil held at 175–180 °C, residence time tuned per SKU to hit a crunch profile rather than a colour. Oil is filtered continuously, monitored for polar compounds and replaced on schedule.
Centrifugal de-oiling drops the surface oil; seasoning is applied while the sheet is still hot so it bonds. Powders are milled to ~80 mesh for even coverage.
Product is filled into retail cans, seal integrity is checked, and every single can passes a metal detector before it reaches the carton.
